Lentil and Vegetable Soup


A healthy and hearty one pot meal.


1 packet Turmeric and Co Mysoor Dal

1 tbsp Olive oil

½ cup chopped red onion

2 cloves garlic

1 carrot, peeled and chopped

1 small potato or sweet potato, peeled and chopped

1 cup spinach leaves

6 cups water or stock



  1. Heat oil on medium heat.

  2. Add onion and cook, stirring occasionally, until soft and light golden

  3. Stir in garlic and cook for 1 minute. Add Mysoor dal pack, water/stock, potato, and carrots; bring to a simmer and cook, partially covered until lentils and vegetables  are soft  - about 20 mins then stir in spinach and cook for another 1-2 mins.

  • Ladle soup into bowls and serve with a dollop of coriander yogurt (mix natural yoghurt and chopped coriander).
